Take Control

The only reason his other relationships moved too fast was because his girlfriends wanted to or he made them believe it was the right thing to do. You can change this by taking control of the relationship and it seems like you already have.

Test Him

I agree. As I said in another question: She should hang with him, but not give any away. If he is just after action, he will bail.

It's good to hear that you respect yourself and he is aware of this. You should hold onto this guy because he makes you feel good and loved, but I'd definitely hold out on the sex and see if he really cares about you but the only way to see if it's not a fling is to drive the test of time.

Are You the One to Change Him?

As for the immature thing, (most) guys eventually grow up and it usually takes a woman to make them grow. So what you have to decide is, are you that woman?
