How do we get her parents to lighten up?

I totally agree with her, because it is true. If you sneak around, then the parents will eventually find out and then it will be all over. No phone calls, nothing.

So just take your time with this. Remember that she is 4 years younger than you and her parents think that all guys that age are the same. Give them time and hopefully they will give in.
